7 Layer Nachos – Best Vegetarian Nachos

7 Layer Nachos, as the name suggest, has 7 scrumptious layers. But you can add or remove any layer according to your liking. This is my vegetarian version of a Nachos Supreme, and believe me, it will feel a crowd and make it kiss your feet.

Nachos are always a party favorite. It is the first thing we order when we go to a sports bar, and if you are lucky enough to go to an authentic Mexican restaurant, the first thing they will put on your table is a bowl of steaming chips with salsa.

I wanted August to be Fiesta month here on the blog. But then I found out Hard Rock Café is also having a fiesta festival. Things kind of exploded with my epic Pasta Italia Recipe for Del Monte and the limited launch of my ecookbook 30 Days of Daal.

So I am finally catching up and writing about these awesome sauce nachos. They have an awesome salsa, and much more!

If you have been exposed to the movie theater nachos here in India, then let me assure you. These will knock your socks off.

So far, only Chilis had presented an acceptable version of nachos to me here in India. But now I am showing you a way to make these at home.

7 Layer nachos

The best part of these loaded 7 Layer Nachos is that you need the same effort to make these for 5 people or 10 people. You just need to get your fixings right, and then you have to load on the goodies on a platter.

The layers are – refried beans or black/ pinto beans. I have reluctantly used rajma beans here since I couldn’t find even a can of black beans locally.

The corn salsa is pretty easy to make and I have a recipe here.

The pico da gallo or tomato based salsa is a must. And I have a detailed recipe and video here.

Cheese, sliced olives and jalapenos are pretty easy to get. Use a Mexican blend of cheese if possible, or just cheddar and Colby cheese. Do avoid using processed cheese.

Sour cream and guacamole are a must. The guacamole is made at home and is pretty easy, really. Let me know if you guys want a recipe for it.

I have just used shredded cheese here. You can also use a warm queso sauce, or pop this plate under the broiler for a few seconds to melt the cheese (Use an oven friendly plate).

7 Layer Nachos – Best Vegetarian Nachos

Ingredients

  • 2 Packs Corn Chips
  • 1 cup tomato salsa
  • 1 cup corn salsa
  • ¼ cup jalapenos
  • ¼ cup sliced olives
  • 1/4 cup sour cream
  • ½ cup guacamole
  • 1 cup Cheese
  • 1 Cup refried beans
  • 1/4 cup scallions chopped
  • For the Refried Beans
  • 1 cup rajma cooked
  • ½ tsp Chili seasoning
  • ½ tsp cumin powder
  • ¼ tsp chipotle powder
  • 1 tsp oil
  • Salt to taste

Method

    For the Refried Beans
  1. Mash the cooked rajma roughly so that some of it is still chunky.
  2. Heat oil and add the cooked rajma.
  3. Add chili, cumin, chipotle powder, salt and mix well.
  4. Add some water to get a stew like consistency.
  5. Simmer until it thickens.
  6. Cool completely.
  7. Assembling the nachos.
  8. Place the corn chips at the bottom of a platter.
  9. Add refried beans.
  10. Add corn salsa.
  11. Add tomato salsa.
  12. Add cheese, olives and jalapenos.
  13. Add sour cream and guacamole.
  14. Sprinkle some chopped scallions on top.
  15. Dig in.
