Ever since I read about Hyatt Pune’s Mango Master Class on their Facebook page, I knew I wanted to be there. As you know, I had the greatest time at an Italian food Master Class at the Westin last year. I was definitely interested in a similar experience.
Mangoes being in season, I am on a roll making all kinds of mango recipes like my 3 ingredient mango frozen yogurt.
Learning at the hands of the masters or expert chefs at the Hyatt would be the cherry on the cake.
I got talking with fellow Pune blogger @TheBausGirl – she writes an awesome blog and covers all kinds of stuff from food to fashion – and she told me that a seat had opened up on the class at the last minute.
If you haven’t been to Hyatt Pune in Kalyani Nagar, you are missing something. Baan Tao, especially, is a must visit because they will totally change all your impressions of what Thai food is or should be. Soft lighting, wood accents and a cascading wall of water as you enter, and I immediately felt my heartbeat slow down.

The class started with Chef Amita showing us how to make mango mousse. Gelatin was added to make a cake and it was put away to set.
Next came an array of lip smacking salads.
The Raw Mango Salad was my favorite. It is seasonal and a must try while you are still getting kairi or raw mango in the market. Thai food uses hot, sweet, sour, salty and bitter flavors and this salad was a testament to that.
Next came a lettuce based salad with ripe mango wedges and a cashew olive oil dressing.
Raw papaya salad or Som Tam had to make an appearance, considering it is on every Thai menu. I totally inhaled the spicy-sweet version of this crunchy salad.
Mango smoothie wound up the class – a simple but very popular recipe judging by the enthusiasm of the crowd.
People asked loads of questions, not just limited to the recipes that were taught. There was a snacks spread later that featured the mango mousse cake we made earlier.
The chefs mingled with the guests and answered yet another round of questions. Everyone left all fired up to try out these delicious mango recipes.
Special Note for Vegetarians, vegans and folks with allergies – The salads were vegan and everything else was vegetarian. There was no fish sauce or shrimp paste added making it possible for me to taste everything. This won me over!
